Differentiate between the following:
(i) amylose and amylopectin
(ii) peptide linkage and glycosidic linkage
(iii) fibrous proteins and globular proteins
(i) amylose and amylopectin
(ii) peptide linkage and glycosidic linkage
(iii) fibrous proteins and globular proteins
Solution
(i) \textbf{Amylose} — a linear α-1,4 chain of glucose, water-soluble, 15–20% of starch. \textbf{Amylopectin} — branched, α-1,4 chains with α-1,6 branch points, water-insoluble, 80–85%.
(ii) The \textbf{peptide} bond is the amide –CO–NH– joining amino acids; the \textbf{glycosidic} bond is the oxygen bridge –O– joining monosaccharides.
(iii) \textbf{Fibrous} proteins: parallel chains, insoluble, structural (keratin). \textbf{Globular}: folded spheres, soluble, functional (albumin, enzymes).
