Explain the following terms:
i) invert sugar
ii) polypeptides
i) invert sugar
ii) polypeptides
Solution
(i) Hydrolysis of (dextrorotatory) sucrose gives equimolar glucose (+52.5°) and fructose (−92.4°); the mixture is laevorotatory — the sign of rotation \textit{inverts}, so the product is \textbf{invert sugar}.
(ii) \textbf{Polypeptides} are chains of many (>10) amino-acid residues joined by –CO–NH– peptide bonds; proteins are polypeptides of high molecular mass.
