Name the products of hydrolysis of sucrose. Why is sucrose not a reducing sugar?
Solution
In sucrose the glycosidic bond joins glucose's C-1 to fructose's C-2 — the \textit{both} reducing (anomeric) centres are tied, leaving no free hemiacetal group, so sucrose cannot reduce Fehling's/Tollens'.
