Explain the term mutarotation, giving an example.

Solution

When a pure anomer dissolves, it slowly interconverts through the open-chain form with the other anomer until equilibrium — the specific rotation drifts accordingly. This change is \textbf{mutarotation}:

equilibrium rotation +52.5°.
